1 cup uncooked jasmine or long grain white rice
2 Tbsp. butter
1 cup sliced celery
1 cup thinly sliced green onions
1 Tbsp. grated lemon zest
1 tsp. salt
1/4 tsp. pepper
Cook rice according to package directions. Meanwhile, in a skillet, heat butter over medium heat. Add celery and onions; cook until tender. Add rice, lemon zest, salt and pepper; toss lightly. Cook until warm.
