Venison is naturally much leaner than beef, so it’s best when cooked with added fat. We all know everything is better with bacon, but in this recipe, the bacon is used for both its delicious, smoky flavor and its fat content. I make this super easy meat loaf with ketchup, but try it with your favorite BBQ sauce, too. It’s great with mashed potatoes or steamed vegetables.

1½ pounds ground venison
1 small onion, diced
1 cup grated Parmesan cheese
1 large egg
¼ cup ketchup or BBQ sauce
6 strips bacon

Preheat the oven to 350°F.

In a large bowl, combine the venison, onion, Parmesan, egg, and ketchup; use your hands to mix well. Transfer the meat mixture to a 9-by-13-inch baking pan, and shape it into a loaf that is about 2 inches tall. Arrange the bacon slices over the loaf.

Bake for 1 hour or until the internal temperature of the meat loaf reaches 160°F.

Remove the meat loaf from the oven. Let it rest for 5 minutes before serving.
