Given such a definition, sensitive souls and delicate taste buds quiver in anticipation at the idea of sampling this delicacy. High in protein: ‘Have some heart, you’ll be strong!’ Low in fat: ‘Small belly, big heart!’ It’s high time we brought the benefits of this choice food, full of emotion, up to date. The heart has a simple and democratic generosity that’s all its own: ‘If you have many riches, give some of your wealth; if you have little, give your heart.’ In fact, you need heart to cook. ‘Ah! You have such a good heart!’ another friend told me, tears in his eyes, remembering a fine, generous and tasty dish.

We offer our hearts to give pleasure (the duck is a perfect example) and we open our hearts to share pleasure, as a well-bred calf would say. Don’t overdo it, though — heartburn can quickly spoil the moment.
