MARROW TOASTS

SERVES 6

10 MINUTES PREPARATION TIME

25 MINUTES COOKING TIME

6 large marrow bones

6 slices of good country-style bread

2 garlic cloves, halved lengthways

1 carrot, very finely diced

1 celery stalk, very thinly sliced

½ a bunch of chives, snipped

½ a bunch of chervil, leaves picked

Fine sea salt and cracked black pepper

THE MARROW BONES

Preheat the oven to 180°C (350°F/Gas 4).

Poach the marrow bones for 20 minutes in a large saucepan of boiling water. Set aside.

THE TOASTS

Meanwhile, rub the slices of bread with the garlic. Place on a baking tray and bake until the bread is golden brown.

Spread the bread with the marrow scooped from inside the bone and sprinkle over the carrot, celery, chives and chervil. Season and serve immediately.
