ST JOSEPH’S LEMONADE

This recipe comes via St Joseph’s school in Molong, New South Wales. The kids there made a big batch of lemonade to sell and raise funds for their kitchen garden, which I visited and wrote about for my blog. It’s a great simple recipe and extra easy when you have lots of little hands to help squeeze all those lemons!

MAKES 4 LITRES OR JUST OVER FIVE 3 CUP (750 ML) BOTTLES

800 ml (28 fl oz) freshly squeezed lemon juice

Zest of 2 lemons (slice thin strips of the skin, so it is easy to remove later)

2 kg (4 lb 8 oz) sugar

3 tsp citric acid

Pour 2.4 litres (84 fl oz) water into a large saucepan. Add the lemon juice and lemon zest and bring to the boil. Pour in the sugar, stirring until it has dissolved. Take the pan off the heat and stir in the citric acid. Allow to cool, then discard the lemon zest.

Strain the lemon juice and divide among sterilised bottles. Seal and store in the fridge.

Dilute the lemonade mix with cold water and serve with lots of ice.
