Directions:

1. Clean and chop all your vegetables.

 

2. Add all of the ingredients to a large soup pot and bring to a boil.

 

3. Cover the pot and reduce heat to a simmer for 60 minutes.

 

4. Option 1 - strain the veggies for a pure broth.

 

5. Option 2 - strain the vegetables and add a few back in.

 

6. Option 3 (my favorite) - use your veggies and blend it up! Use either an immersion blender, or place all the larger veggies in a blender with a few cups of the broth.

 

7. You can leave the remaining broth and any smaller veggie bits in the pot.

 

8. Blend it up and return it to the remaining broth, stir to incorporate.

 

9. Taste and adjust seasonings as needed.
