Approved Recipes and Procedures

Some states will require you to have your recipes and processing procedures approved by a processing authority. These provide product testing to determine whether or not the process you use is safe. Processing authorities keep up-to-date records on national food safety regulations so they can make sure products fulfill all standards. Contact your local county and city health inspector or search online to see if there is a processing authority in your area and whether or not you need their approval. We didn’t have to do that in our state but thought I should mention it just in case.

An appropriate processing authority needs to a recognized independent lab that has the expertise needed to run the tests required to show a food products safety including pH, water availability and microbial analysis. They also need to provide you with written reports that validate your process or results.
