Pectin Recipe

Ingredients:

  3 pounds washed and sliced tart green apples.

  4 cups water

  2 tablespoons lemon juice

Directions:

  1. Wash but don't peel about seven large tart green apples. Crab Apples are best, but any tart apples will work.
  2. Cut into pieces and place in a pot.
  3. Add the water and lemon juice.
  4. Boil until it is reduced by half; about 30 to 45 minutes.
  5. Strain through a cheesecloth or jelly bag.
  6. Boil the juice for another 20 minutes.
  7. Pour into sanitized jars and seal them.
  8. Store in the refrigerator, freezer or process in a water bath.
