WHY THIS RECIPE WORKS: With chicken, shrimp, sausage, rice, tomatoes, and a laundry list of herbs and spices, jambalaya is anything but short on flavor, but a classic recipe is also anything but quick to prepare. To shorten the shopping list, we keep the key flavor elements—onion, celery, red pepper, and thyme—and limit the proteins to pork tenderloin and andouille sausage, which lends its characteristic spiciness and ensures this meal is plenty hearty. To streamline, we microwave the rice and prepare the rest of the ingredients on the stovetop while the rice cooks.

(1-pound) pork tenderloin, trimmed and sliced crosswise ¾ inch thick |

1. Combine 1 cup broth, rice, and ¾ teaspoon salt in bowl, cover, and microwave until liquid is absorbed, 10 to 12 minutes.
2. Meanwhile, pat pork dry with paper towels and season with salt and pepper. Heat 2 teaspoons oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add sausage and cook, stirring occasionally, until browned, about 4 minutes. Transfer sausage to plate. Cook tenderloin medallions in sausage fat until browned, about 4 minutes. Transfer to plate with sausage.
3. Add onion, celery, bell pepper, and remaining 2 teaspoons oil to now-empty skillet and cook over medium-high heat until softened, about 5 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds. Stir rice, remaining 1 cup broth, and sausage into skillet and bring to boil. Reduce heat to medium-low and cook, covered, until liquid is absorbed, about 10 minutes. Stir in pork. Remove skillet from heat and let sit, covered, until pork is heated through, about 5 minutes. Season with salt and pepper to taste and serve with hot sauce.
