SIMPLE SIDE
Fit wide saucepan with steamer basket. Add water to pan, keeping level below basket. Bring water to boil, add 4 heads baby bok choy, cut in half lengthwise, and cover. Steam until bok choy is just tender, 4 to 6 minutes. Transfer to serving bowl, toss with 1 tablespoon unsalted butter, and season with salt and pepper to taste. Serves 4.
