CUTTING SQUASH INTO RIBBONS

To cut squash into ribbons, we prefer using a mandoline fitted with a slicing blade, but you can also use a vegetable peeler. Run the squash down the length of the mandoline or run the peeler down the length of the squash. Repeat the process until you reach the seeds in the middle, then turn the squash and repeat on the other sides.
