Indonesian-Style Pork Fried Rice

Pan IconWHY THIS RECIPE WORKS: Sweet, salty, and slightly spicy, Indonesian-style fried rice provides a welcome change from the more familiar Chinese-style versions. Starting with precooked rice makes this recipe no-fuss, while the use of Indonesian sweet soy sauce is key to creating the right flavor profile. Pork tenderloin, mushrooms, scrambled eggs (a traditional Indonesian fried rice inclusion), and cabbage (we opt for prepared coleslaw mix for simplicity) all add heft and texture. Each component gets cooked in the skillet in stages, then it all comes together at the end. Freezing the pork tenderloin for 15 minutes will make it easier to slice.

ounces pork tenderloin, trimmed, halved lengthwise, and sliced thin

ounces white mushrooms, trimmed and sliced

cups (5½ ounces) shredded green coleslaw mix

scallions, sliced thin, white and green parts separated

(8.8-ounce) packages Uncle Ben’s Original Long Grain Ready Rice

cucumber, peeled, halved lengthwise, seeded, and sliced ½ inch thick

1. Combine soy sauce, vinegar, and hot sauce in bowl. Heat 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat until just smoking. Pat pork dry with paper towels. Add pork to skillet, break up any clumps, and cook until no longer pink, about 2 minutes; transfer to bowl. Add 1 tablespoon oil and eggs to now-empty skillet and cook, stirring constantly, until just cooked through, about 1½ minutes. Transfer scrambled eggs to bowl with pork.

2. Heat remaining ¼ cup oil in Dutch oven until just smoking. Add mushrooms and cook until lightly browned, about 5 minutes. Add coleslaw mix and scallion whites and cook until just softened, about 1 minute. Whisk soy-sauce mixture to recombine, then add rice, soy-sauce mixture, pork and egg mixture, bean sprouts, and scallion greens to pot and cook, stirring constantly, until heated through and sauce is thoroughly incorporated, 1 to 2 minutes. Sprinkle with cucumber and serve.
