HIMALAYAN SALTED CARAMEL BITES WITH DATES

These little bites really don’t need an introduction, as the name says it all. You’re sure to fall in love with these gems of salted caramel goodness.

MAKES 15–20

100g/3½ oz pitted dates

50g/1¾ oz cashew nuts

30g/1 oz raisins

1 tbsp Lucy Bee coconut oil

2 tbsp ground almonds

2 tbsp maple syrup

½ tsp Lucy Bee Himalayan salt

Line a tray with baking parchment. Place all the ingredients in a food processor and blitz until thoroughly mixed. Roll into small, bite-sized balls, place on the lined tray and chill in the fridge or freezer.

Store in the freezer in an airtight container (they are best eaten straight from the freezer).

TIP

These are a good source of natural sugars when you need a pick-me-up.
