This is our twist on a traditional guacamole. It works as a great accompaniment to our Chicken Burger.
SERVES 4–6
1 large avocado, mashed
100g/3½ oz cooked peas
Juice of 1 lemon
1 large tomato, finely diced
1 tsp olive oil
Lucy Bee Himalayan salt and ground black pepper
Mix all the ingredients together with salt and pepper to taste. Cover and store in the fridge for up to 2 days.
