If you are not actually doing a Whole30 but have adopted this way of eating as a lifestyle choice for the long haul, fajitas (minus the tortillas) are actually a decent choice when eating out. If you are doing a Whole30, this soup delivers all of the flavors of this Mexican favorite and is perfectly compliant.

1 pound ground beef
1 cup chopped onion
2 cloves garlic, minced
1 medium green bell pepper, coarsely chopped
1 medium red bell pepper, coarsely chopped
1 serrano chile pepper, seeded and chopped
4 cups Whole30-compliant beef broth or Beef Bone Broth (page 294)
1 can (14.5 ounces) Whole30-compliant fire-roasted diced tomatoes, undrained
2 teaspoons chili powder
½ teaspoon salt
Chopped fresh cilantro
Lime wedges
In a large skillet, cook the beef, onion, and garlic over medium-high heat, breaking up the meat with a wooden spoon, until browned. Drain off any fat and transfer the beef mixture to a 3½- to 4-quart slow cooker. Add the bell peppers, serrano pepper, broth, tomatoes, chili powder, and salt. Cover and cook on low for 6 to 7 hours or on high for 3 to 3½ hours.
Serve the soup with cilantro and lime wedges.
