Pork Loin with Sweet Potato, Apple, and Pear Smash

Although this dish is delicious any time of year, it’s definitely one to make in the fall. It’s packed with fall veggies and fruits—even cranberries. The cinnamon gives the smash a warm, slightly sweet flavor that’s perfect with the savory pork.

2½ pounds Whole30-compliant pork loin

1 teaspoon dried thyme

½ teaspoon Whole30-compliant garlic and herb seasoning

¼ teaspoon black pepper

1½ pounds sweet potatoes, peeled and cut into 2-inch chunks

2 cooking apples, such as Fuji, peeled, cored, and quartered

2 cooking pears, such as Bartlett, peeled, cored, and quartered

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup fresh or frozen cranberries

1 tablespoon cider vinegar

Place the pork in a 6-quart slow cooker and add ¼ cup water. In a small bowl, stir together the thyme, seasoning blend, and pepper. Rub the spice mixture over the pork.

In a large bowl, combine the sweet potatoes, apples, and pears. Sprinkle with the cinnamon and salt and toss to combine. Add to the cooker and top with the cranberries.

Cover and cook for 6 hours on low or for 3 hours on high.

Use a slotted spoon to transfer the sweet potatoes, apples, pears, and cranberries to a large bowl. Use a potato masher or fork to mash to desired consistency. Stir in the vinegar.

Slice the pork and serve with the smash.
