Mushroom lovers, make this dish! Tender, juicy pork chops are topped with a mountain of saucy mushrooms and crisp-cooked bacon—and served with a side of fresh, lemony, bright-green broccoli.

4 tablespoons Clarified Butter (page 296) or ghee
2 packages (8 ounces each) sliced cremini mushrooms
½ cup sliced yellow onion
2 cloves garlic, minced
¾ teaspoon salt
1¼ cups Whole30-compliant chicken broth or Chicken Bone Broth (page 294)
4 Whole30-compliant bone-in, 1-inch-thick pork loin chops (2 pounds total)
½ teaspoon dried thyme
¼ teaspoon black pepper
2 tablespoons arrowroot powder
1 pound broccoli florets
1 teaspoon fresh lemon juice
4 slices Whole30-compliant bacon, crisp-cooked and crumbled
On a 6-quart Instant Pot, select Sauté and adjust to Normal/Medium. Add 2 tablespoons of the butter to the pot. When it’s hot, add the mushrooms, onion, garlic, and ½ teaspoon of the salt and cook, stirring occasionally, until the vegetables are browned and tender, 6 to 8 minutes. Select Cancel. Stir in 1 cup of the broth. Sprinkle the pork chops with the thyme and pepper; add to the pot. Lock the lid in place.
Select Manual and cook on high pressure for 4 minutes. Use quick release. Transfer the pork chops to a serving platter; cover to keep warm.
In a small bowl, whisk together the arrowroot and remaining ¼ cup broth. Add the arrowroot mixture to the pot. Select Sauté and adjust to Normal/Medium. Cook until the sauce comes to a simmer. Select Cancel.
Place the broccoli florets in a microwave-safe dish and add 3 tablespoons water. Cover and microwave, stirring once, until tender, about 5 minutes. Stir in the lemon juice, remaining 2 tablespoons butter, and remaining ¼ teaspoon salt.
Serve the mushroom sauce over the pork chops and top with the bacon. Serve the broccoli alongside.
Tip Here’s an easy, neat way to quickly cook bacon when you don’t need the drippings: Place the slices of bacon between two paper towels on a microwave-safe plate. Microwave on high for 1 minute. Change the paper towels and microwave in 15-second increments until the bacon is the desired doneness.
