MAKES 35 • PREP: 25 MIN • BAKE: 15 TO 16 MIN PER BATCH
1 cup (2 sticks) unsalted butter, softened
1 cup packed brown sugar
½ cup granulated sugar
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 cups uncooked old-fashioned oats
1 Heat oven to 350°F. Beat butter and sugars in large bowl with electric mixer at medium speed until light and fluffy. Beat in eggs, one at a time, beating well after each. Add vanilla; mix well. In a separate bowl, combine flour, baking powder, baking soda, salt and oats. Add to batter mixture all at once; blend well.
2 Scoop tablespoonfulls of dough onto baking sheets, leaving 1 in. between cookies. Press cookies down slightly.
3 Bake 15 to 16 minutes or until golden brown. Cool on sheets 5 minutes; transfer to a wire rack to cool completely.
