SERVES 8 (1 LARGE MEAT LOAF OR 4 MINI MEAT LOAVES)
MEAT LOAF INGREDIENTS:
2 pounds ground turkey
3 eggs
1½ cups finely chopped (or pulsed in a food processor) white mushrooms
1 cup grated onion
¼ cup fresh parsley, chopped, or 1 tablespoon dried
¼ cup fresh basil, chopped, or 1 tablespoon dried
2 tablespoons tomato paste
1 tablespoon Dijon mustard
¾ teaspoon salt
¼ teaspoon pepper
SAUCE INGREDIENTS:
4 tablespoons tomato paste
2 tablespoons low-sodium tamari sauce
PREPARATION:
1. Preheat oven to 375 degrees F.
2. Mix all the meat loaf ingredients and shape into 4 mini meat loaves. Place them on a parchment-lined baking sheet, or put into a 9 x 5-inch oiled loaf pan.
3. In a separate bowl, mix together tomato paste and tamari sauce and spread the sauce over the tops of the meat loaves.
4. Bake 4 mini loaves for 30 minutes or large loaf for 1 hour, or until cooked through. Using a meat thermometer, the internal temperature should read 165 degrees F.
5. Allow dish to cool for a few minutes before serving.
NOTE: If you prefer, substitute a jar of your favorite sugar-free, organic pasta sauce instead of the tomato paste and tamari sauce recipe.
