SERVES 4
INGREDIENTS:
¼ cup extra-virgin olive oil, divided
2 medium onions, finely chopped, divided
6 garlic cloves, divided
1 teaspoon dried Italian seasoning
1 (28-ounce) can San Marzano whole tomatoes
salt and pepper, to taste
1 pound ground turkey
½ cup cooked quinoa or brown rice (according to package)
1 tablespoon crushed red pepper flakes
2 teaspoons dried marjoram
4 bell peppers, red and yellow
¼ cup low-sodium chicken or vegetable broth or bone broth (here)
¼ cup canned tomato sauce or Simple Fresh Tomato Sauce
PREPARATION:
1. Preheat oven to 375 degrees F.
2. Heat 2 tablespoons of the olive oil in a saucepan over medium-high heat, add half the onion, and cook till soft, then add half the garlic and cook for 30 seconds.
3. Add Italian seasoning and the tomatoes, and simmer for about 20 minutes.
4. Puree the sauce with an immersion blender or in a regular blender. Season to taste with salt and pepper. Set aside.
5. Heat the remaining 2 tablespoons olive oil in a large sauté pan over medium-high heat, add the remaining onion and cook till soft, then add remaining garlic and cook for 30 seconds.
6. Add the ground turkey, breaking it up with a wooden spoon till cooked through. Add the rice or quinoa and 1 cup of the tomato sauce. Season to taste with red pepper flakes and marjoram. Set aside to allow the filling to cool. Cut tops off the bell peppers and remove seeds. Cut a small slice of pepper off the bottom to help them stand up.
7. Stuff the peppers with the filling.
8. Mix broth and canned tomato sauce and pour on the bottom of a baking dish. Place the peppers in the pan and cover with remaining sauce.
9. Cover with foil. Bake for 15 to 20 minutes until peppers are soft.
10. Allow to cool for a few minutes before serving. (Internal temperature will be very hot.)
NOTE: This recipe also tastes great with lamb, bison and grass-fed beef.
