Veggie Gratin

This wonderful vegetarian option is loaded with nutrition and a decent amount of protein.

SERVES 6

INGREDIENTS:

2 cups cherry tomatoes, halved

1 cup chopped cauliflower

1 cup chopped yellow squash

1 cup chopped zucchini

1 (15-ounce) can white beans, drained and rinsed

5 garlic cloves, minced

2 tablespoons macadamia nut oil or avocado oil

1 teaspoon salt

½ teaspoon pepper

½ cup walnuts, chopped

2 tablespoons flat-leaf parsley, chopped

PREPARATION:

1. Preheat oven to 375 degrees F.

2. Combine tomatoes, cauliflower, squash, zucchini, beans, and garlic in a large bowl.

3. Stir in the oil, salt, and pepper.

4. Place the mixed vegetables in a 2-quart casserole pan, and sprinkle the walnuts and parsley on top.

5. Bake for 40 minutes or till veggies are tender.
