INGREDIENTS:
2 garlic cloves
1 (28-ounce) can San Marzano whole tomatoes, juice separated and reserved, or 3 large fresh tomatoes
zest and juice of 1 lime
¼ cup cilantro leaves
salt and pepper, to taste
OPTIONAL INGREDIENT:
1 jalapeño pepper—add the seeds and ribs if you prefer more heat
PREPARATION:
1. In a food processor, chop the garlic cloves and jalapeño pepper, if more heat is desired.
2. Add the tomatoes, lime zest, lime juice, and the cilantro. Pulse till smooth.
3. Add the reserved tomato juice slowly until you reach the desired thickness.
