Guacamole is a go-to favorite spread for many things in our house. When our daughter was two years old, she called avocados “God’s butter,” and she has loved them ever since. We put them on eggs, coconut wraps, chopped veggies, soups . . . Just about anything tastes better with avocado! But remember, avocados are calorie dense, so make a little go a long way. Guacamole is intended to be a condiment.
My family tends to like things very simple, just avocados and a bit of garlic salt, but try experimenting with some of your favorite spices.
SERVES 12
INGREDIENTS:
4 ripe avocados, peeled and pitted
garlic salt, to taste
OPTIONAL INGREDIENTS:
1 large tomato, finely diced
¼ cup cilantro, chopped
1 tablespoon lime juice
PREPARATION:
1. If you prefer chunky guacamole, mash avocados with a fork in large bowl. If you like your guacamole smoother, put the avocados in a food processor along with all other ingredients and pulse until smooth. Don’t overprocess.
2. If you are hand mashing, add all other ingredients after avocados are thoroughly mashed. You may choose to keep cilantro out and add as a garnish.
3. Transfer to an airtight container until ready to serve. Guacamole doesn’t last long, but the addition of lime or lemon juice will help keep it from turning brown quickly.
