INGREDIENTS:
1 ripe avocado, peeled and pitted
1 garlic clove, halved
juice of 1 lemon
¼ cup cilantro leaves, cleaned and pulled from stem
¼ teaspoon salt
2 tablespoons olive oil
¼ cup water
PREPARATION
1. In a blender or food processor, place avocado, garlic, lemon juice, cilantro, salt, and olive oil.
2. Pulse or mix on low setting for about 30 seconds or until well pureed.
3. Add water slowly, as necessary until mixture reaches a creamy consistency. Be careful not to make too thin.
4. Store in airtight container and refrigerate until ready to use.
