SERVES 12
INGREDIENTS:
¾ cup almond flour
¾ cup coconut flour
1 teaspoon baking soda
¼ teaspoon salt
1 egg
3 tablespoons raw honey
¼ cup coconut oil, melted
zest and juice of 1 lemon
½ teaspoon pure vanilla extract
¼ cup slivered almonds
PREPARATION:
1. Preheat oven to 350 degrees F.
2. Combine dry ingredients—the flours, baking soda, and salt—in a bowl, and whisk.
3. Combine wet ingredients—the egg, honey, coconut oil, lemon zest and juice, and vanilla extract—and stir until thoroughly combined. Add wet ingredients to dry ingredients and mix until a smooth dough forms. The dough will be very thick.
4. Form into 12 equal-sized cookies and place on a parchment-lined baking sheet. Press dough down to flatten with the back of a spoon dipped in water. Place several almond slivers on top of each cookie.
5. Bake about 8 to 10 minutes depending on desired crispness.
6. Allow to cool and set for a few minutes before serving.
