Three-Ingredient Banana Nut Cookies

These amazing cookies are about as wholesome a snack as you’ll find. Kids absolutely love them. I love having something I can throw together in a jiffy. On rare occasions you can even make these for breakfast so kids think you’re really cool. This is a fun recipe for treating your kids to “cookies for breakfast,” especially at sleepovers where there are sure to be a few picky eaters in the group. If you don’t have grainless granola on hand, you can substitute quick oats.

SERVES 16

INGREDIENTS:

Coconut oil nonstick cooking spray

2 bananas, mashed

1 cup Sunrise Grainless Granola or Steve’s PaleoKrunch Granola, crumbled fine

¼ cup of your favorite cookie add-ins (chopped walnuts; sugar-free, dairy-free chocolate chips; or goji berries)

PREPARATION:

1. Preheat oven to 350 degrees F. Spray baking sheet with coconut oil or line with parchment paper.

2. In a medium-sized bowl combine mashed banana, granola, and add-in ingredient of your choice (nuts, chocolate chips, or berries). Mix until thoroughly blended.

3. Evenly place tablespoon-sized balls onto the baking sheet and bake for 12 to 15 minutes depending on desired crispiness.
