Blueberry Smoothie

SERVES 2

With some of the highest antioxidant protection of all fruits, blueberries are also a source of vitamin A, folate, and potassium.

1 cup frozen blueberries

1 cup vanilla soymilk

½ ripe banana

1 tablespoon flaxseed oil

Combine all the ingredients in a blender and purée until smooth, about 45 to 60 seconds. Chill briefly if desired. Serve immediately.

“I may never be happy, but tonight I am content. Nothing more than an empty house, the warm hazy weariness from a day spent setting strawberry runners in the sun, a glass of cool sweet milk, and a shallow dish of blueberries bathed in cream.”
— Sylvia Plath
