What could be more cooling than a slice of watermelon? A glass of it. Turn it into a cocktail by adding a splash of rum and a dusting of confectioners’ sugar—and feel good about the vitamin A and beta-carotene in each glass.
1 tangerine, peeled, seeded, and quartered
4 cups chilled cubed watermelon, seeds removed (or choose a seedless melon)
Juice of ½ lime
2 teaspoons freshly chopped fresh mint leaves
Combine all the ingredients in a blender and purée until smooth, about 45 to 60 seconds. Serve immediately.
