Red Pepper Juice

Unwaxed red bell peppers can be found at health food stores. Look for perfect peppers with no blemishes and a taut, shiny skin. The pigment that turns their skin red (or yellow or orange) is good for you.

6 unwaxed red bell peppers, cored, seeded, and coarsely chopped

Juice of 1 lemon

Sea salt and freshly ground black pepper, to taste

Combine all the ingredients in a blender and blend for 1 minute. Strain through a fine-mesh sieve and serve.
