Fried Fragrant Bananas
Warm, sweet and fragrant on the inside and crispy on the outside these bananas are simple to prepare and delicious to eat.
serves 4
125 g (4½ oz/1 cup) self-raising flour
2 tablespoons milk
1 tablespoon butter, melted
1 tablespoon caster (superfine) sugar
4 apple or lady finger bananas, or 3 ordinary bananas
oil for deep-frying
honey (optional)
Combine the flour, milk, butter and sugar, then add enough water to make a thick batter.
Cut the bananas into 3 cm (1¼ inch) chunks.
Fill a wok one-quarter full of oil. Heat the oil to 180°C (350°F), or until a piece of bread fries golden brown in 15 seconds when dropped in the oil. Dip the banana pieces, a few at a time, into the batter and then fry them for 3 minutes, or until they are well browned on all sides. Drain on paper towels. Serve the bananas drizzled with honey for extra sweetness.
