ON THE SIDE: ROASTED BROCCOLI


Adjust oven rack to lowest position and heat oven to 500 degrees. Place aluminum foil–lined rimmed baking sheet in oven. Cut 2 pounds broccoli at juncture of crowns and stalks. Peel stalks and cut into ½-inch-thick planks about 3 inches long. Place crowns upside down and cut in half through central stalk, then cut each half into 3 or 4 wedges for 3- to 4-inch-diameter crown, or into 6 wedges for 4- to 5-inch-diameter crown. Toss with 1 tablespoon extra-virgin olive oil and ½ teaspoon sugar and season with salt and pepper. Carefully place broccoli on baking sheet and roast until tender, 14 to 16 minutes. Serves 4.
