WHY THIS RECIPE WORKS: A nutty, Thai-inspired coconut sauce does wonders for lean, mildly flavored cod without requiring a lot of work. We combined coconut milk with fish sauce, ginger, garlic, and red pepper flakes for the slightest hint of heat. The bold sauce infused the fish with flavor as it poached in the slow cooker. While cooking, the cod rested on top of a bed of edamame to prevent the bottom of the fish from overcooking. The nutty edamame base gave our meal the additional benefit of a side dish that soaked up the rich sauce. To our creamy side dish we added bright fresh cilantro and rice vinegar to balance the sweetness of the coconut milk. Use cod fillets of similar thickness so that they cook at the same rate. Halibut and haddock are good substitutes for the cod. Check the cod’s temperature after 1 hour of cooking and continue to monitor until it registers 140 degrees. 1. Microwave shallots, garlic, ginger, oil, and pepper flakes in bowl, stirring occasionally, until shallots are softened, about 2 minutes; transfer to slow cooker. Stir in edamame, coconut milk, and fish sauce. Season cod with salt and pepper and nestle into slow cooker. Spoon portion of sauce over cod. Cover and cook until cod flakes apart when gently prodded with paring knife and registers 140 degrees, 1 to 2 hours on low.
2. Gently transfer cod to plates. Stir cilantro and vinegar into sauce and season with extra fish sauce to taste. Serve.
