Hulled pumpkin seed kernels, also known as pepitas, are actually one of the most flavorful seeds out there that are also high in important nutrients. They are high in manganese, magnesium, iron, copper, vitamin K, and zinc, as well as being a good source of protein (a quarter cup contains about 8 to 9 grams). When toasted (which is how we like them best), they have a nutty, slightly sweet flavor that makes them the perfect addition to many dishes. They add a wonderful textural crunch to salads, such as our Warm Southwestern Lentil and Bean Salad, or sprinkled over your favorite fall soup—think Creamy Butternut Squash and Apple Soup. A handful sprinkled over yogurt is also a big winner.
