Slug Icon WHY THIS RECIPE WORKS: Widely available at farm stands and now at many grocery stores too, fingerling potatoes are a nice alternative to standard white or red potatoes. They are creamy and dense and feel somehow special because of their small, narrow shape. So for a super-easy and attractive side dish, we turned to fingerlings, which require no prep work and turn perfectly tender in the slow cooker. Although they are traditionally roasted because boiling them dilutes their flavor and turns them mushy, we found that we could add them to the slow cooker without any liquid whatsoever, just some olive oil, garlic, and scallions for flavor, and they retained their delicate sweetness without a hint of mushiness. Unlike some other slow-cooker potato dishes, there was also no need to cover them with a sheet of parchment paper so they would cook through properly. Before serving, we simply added chopped fresh parsley and lemon zest and juice for bright color and flavor. Use fingerling potatoes measuring approximately 3 inches long and 1 inch in diameter. This recipe can easily be doubled in a 5½- to 7-quart slow cooker, but you will need to increase the Cooking Time by 1 hour. See the sidebar that follows the recipe.

teaspoons extra-virgin olive oil

scallions, white parts minced, green parts sliced thin

garlic cloves, minced

Salt and pepper

tablespoon chopped fresh parsley

teaspoon lemon zest plus 1 tablespoon juice

1. Combine potatoes, 1 teaspoon oil, scallion whites, garlic, 1 teaspoon salt, and ¼ teaspoon pepper in slow cooker. Cover and cook until potatoes are tender, 5 to 6 on low or 3 to 4 hours on high.

2. Stir in parsley, lemon zest and juice, scallion greens, and remaining 1 tablespoon oil; season with salt and pepper to taste. Serve. (Potatoes can be held on warm or low setting for up to 2 hours.)
