Cowboy Stew

Makes 10 servings

1 lb. ground beef

salt and pepper to taste

10-oz. can tomatoes with chiles

3 10-3/4 oz. cans minestrone soup

2 15-oz. cans ranch-style beans

15-1/4 oz. can corn

14-1/2 oz. can diced tomatoes

Brown ground beef over medium heat in a stockpot; drain. Add salt and pepper to taste; stir in remaining ingredients. Simmer over low heat for 25 minutes, or until heated through.

Serve up Cowboy Stew chuck-wagon style. Spoon stew into enamelware bowls, add a side of cornbread and keep bandannas on hand for terrific lap-size napkins.
