Makes 4 servings
4 T. butter
1 onion, chopped
3 potatoes, peeled and cubed
2 carrots, peeled and sliced
2 c. water
14-1/2 oz. can chicken broth
4 c. cabbage, shredded
1/4 lb. cooked ham, chopped
pepper to taste
In a large saucepan over medium heat, melt butter and sauté onion until clear. Add potatoes and carrots. Cook, stirring occasionally, for 5 minutes. Add water, broth, cabbage, ham and pepper. Cook over medium-low heat for approximately one hour.
If you drop a lettuce leaf into a pot of soup, it will absorb the excess grease.
