Makes 4 servings
Ingredients:
4 slices of high fiber, whole grain bread
2 small avocados, peeled with stone removed
2 ounces feta cheese, crumbled
2 tbsp. fresh lemon juice
2 tbsp. fresh mint, chopped
Pepper to taste
Directions:
1. Toast your bread in a toaster or broiler.
2. Mash the avocado with a fork until it's smooth. Add the cheese, lemon juice, and mint.
3. Spread the mixture over your toasted bread and garnish with a little black pepper and any extra mint.
