Blackberry Hibiscus Delight

Ingredients:

1lb. fresh blackberries

½ cup red wine vinegar

½ cup caster sugar

2 teaspoons crushed hibiscus flowers

3 bay leaves
Directions:

Preheat your Sous Vide cooker to 140F.

In a saucepot, combine red wine vinegar, caster sugar, hibiscus, and bay leaves.

Heat until the sugar is dissolved. Allow cooling.

Place the blackberries and cooled syrup in a Sous vide bag.

Vacuum seal and submerge in water.

Cook 1 hour 30 minutes.
Finishing steps:

Remove the bag from the cooker and place in ice-cold water 10 minutes.

Open carefully and transfer the content to a bowl.
