Bloody Mary Cocktail

Ingredients:

6 tomatoes, quartered

¼ cup horseradish (from a jar)

¼ cup Worcestershire sauce

2 cups vodka

1 jalapeno pepper, halved, seeded

½ cup lime juice
To serve with:

Salt, Celery Stalks
Directions:
- Heat Sous Vide cooker to 145F.
- In a Sous Vide bag, combine all ingredients.
- Seal the bag using water immersion technique.
- Submerge in water and cook 3 hours.
Finishing steps:
- Remove the bag from the water bath.
- Strain through a fine-mesh sieve and press the tomatoes to release any remaining pulp.
- Allow cooling completely before serving.
- Make a salt rim around the glass. Serve the Bloody Mary in a glass along with a celery stalk.

1 bottle red wine

2 cups apple cider

2 sticks cinnamon

¼ cup maple syrup

1 teaspoon allspice

1 teaspoon cloves

½ teaspoon nutmeg
Directions:
- Preheat Sous Vide to 137F.
- Place all ingredients in a large bag (or two smaller) and seal the bag using water immersion method.
- Submerge the bag in a water bath and cook 1 hour.
Finishing steps:
- Remove the bag from the water bath.
- Strain the wine into a glass bowl. Allow cooling briefly before serving.
