Bloody Mary Cocktail

Ingredients:
-         6 tomatoes, quartered
-         ¼ cup horseradish (from a jar)
-         ¼ cup Worcestershire sauce
-         2 cups vodka
-         1 jalapeno pepper, halved, seeded
-         ½ cup lime juice
To serve with:
-         Salt, Celery Stalks
Directions:
  1. Heat Sous Vide cooker to 145F.
  2. In a Sous Vide bag, combine all ingredients.
  3. Seal the bag using water immersion technique.
  4. Submerge in water and cook 3 hours.
Finishing steps:
  1. Remove the bag from the water bath.
  2. Strain through a fine-mesh sieve and press the tomatoes to release any remaining pulp.
  3. Allow cooling completely before serving.
  4. Make a salt rim around the glass. Serve the Bloody Mary in a glass along with a celery stalk.

Ingredients:
-         1 cup fresh orange juice
-         1 bottle red wine
-         2 cups apple cider
-         2 sticks cinnamon
-         ¼ cup maple syrup
-         1 teaspoon allspice
-         1 teaspoon cloves
-         ½ teaspoon nutmeg
Directions:
  1. Preheat Sous Vide to 137F.
  2. Place all ingredients in a large bag (or two smaller) and seal the bag using water immersion method.
  3. Submerge the bag in a water bath and cook 1 hour.
Finishing steps:
  1. Remove the bag from the water bath.
  2. Strain the wine into a glass bowl. Allow cooling briefly before serving.
