Cheddar Cheese Sauce

Ingredients:

2 cups Gruyere cheese

2 ½ cups whole milk

¾ cup white Cheddar

½ teaspoon salt
Directions:
- Preheat Sous Vide to 167F.
- Slice the cheeses and place into Sous Vide bag along with milk and salt.
- Vacuum seal the bag and submerge into the water bath.
- Cook 15 minutes.
Finishing steps:
- Remove the bag from the water bath.
- Pour the content into a food blender.
- Blend on medium speed until the sauce is smooth.
- Serve.
