Makes: about 400g • Time: 10 minutes
400g unsalted roasted peanuts • sea salt flakes, to taste
1 tablespoon vegetable oil

Blitz half the peanuts in a food processor until coarsely chopped. Add the remaining peanuts and a generous pinch of salt. Process until smooth, then gradually add the oil until you achieve the desired consistency. Add extra salt to taste. Store in an airtight container in the fridge.
