BEETROOT SMOOTHIE

YOU NEED

2 medium cooked beetroots, quartered • ½ small fennel bulb, chopped

a large handful of baby spinach • a handful of frozen berries

1.5cm piece fresh ginger, peeled and chopped, plus extra to taste

Place all the ingredients in a blender, add 125ml water and blitz on high power until smooth. Add more water if needed to achieve the desired consistency. Serve immediately.
