20g coconut oil • 1 banana • 1 teaspoon ground cinnamon
a pinch of ground nutmeg • 2 slices wholemeal bread • mixed berries, to serve

Melt the coconut oil in a frying pan over a medium–high heat. Slice the banana, add to the pan and cook until soft and caramelized on both sides. Sprinkle over the cinnamon and nutmeg, and cook for 1 minute more. Transfer to a mini food processor and blitz until smooth. Alternatively, mash to the desired consistency. Toast the bread, then spread with the whipped banana. Serve immediately, with the berries.
