Two of my four kids are obsessed with chocolate granola and, frankly, so am I! Let’s be honest, it’s actually hard to find a good, healthy version of chocolate granola, and when I have found it, it’s VERY expensive. This recipe was invented with not only chocolate in mind, but also cost and time. So from my kitchen to yours, this one is simple, tastes so good and you can store it, too. Perfect.
2 tablespoons coconut oil
65g (½ cup) blanched almonds
60g (½ cup) cashews
60g (½ cup) pecans
70g (½ cup) raisins
35g (¼ cup) sesame seeds
35g (¼ cup) pumpkin seeds
35g (¼ cup) unsweetened desiccated (dried) coconut
1 teaspoon raw cacao powder
1 teaspoon ground cinnamon
2 tablespoons honey
plant-based milk, to serve
Serves 4
Heat the coconut oil in a large frying pan over a medium heat. Add the nuts, raisins and seeds to the pan first, followed closely by the desiccated coconut, cacao powder, cinnamon and honey. Stir frequently for 15 minutes, reducing the heat slightly after 10 minutes.
Either serve yourself a portion with some plant-based milk and store the rest, or transfer everything to an airtight container.
