Cayenne and Lime Sunflower Seeds


Iron is such an important nutrient, but sadly so many of us simply do not consume enough of it. Sunflower seeds are a fantastic source and are an amazing snack food. As an added plus, lime is known to increase iron absorption in the body.

150g (1¼ cups) sunflower seeds

1 teaspoon olive oil

juice of 1 lime

½ teaspoon cayenne pepper

½ teaspoon sea salt

Makes 3 servings

Preheat the oven to 180°C/350°F/gas 4 and line a baking sheet with parchment paper.

Put the sunflower seeds into a bowl and coat with the olive oil, lime juice, cayenne pepper and salt. Spread the seeds on the baking sheet and bake for 15 minutes. Either serve immediately or leave to cool before storing in an airtight container.
