Spicy Macadamia Dip

Grab some carrots, cucumber, radishes and cherry tomatoes and pack them in a bag along with this dip. Then you will be able to dip in and out of this amazingly creamy and yummy and, yes, good-for-you dip throughout your day. Whether at the office or travelling, this snack is the one that keeps going and going and going. If you don’t have macadamia nuts, simply use cashews or walnuts, as they are also a good option for this delicious dip.

100g (¾ cup) macadamia nuts

½ avocado, peeled and stoned

100ml (⅓ cup + 1 tablespoon) coconut milk

handful of basil

1 teaspoon chilli flakes (red pepper flakes)

juice of ½ lemon

sea salt and freshly ground black pepper

vegetables, for dipping

Serves 2

Blend all the ingredients in a food processor or blender until nice and smooth.

Place in an airtight container, along with a separate baggie filled with your choice of veggies, and you are good to go for healthy snacking all day long.
