Walnut Chia Bites


Walnuts are my favourite nuts not only for their taste and the fact that I can use them in pretty much everything from salads to soups and smoothies – and these super snacks – but also because of the added bonus of Omega-3s that other nuts don’t have. That’s what makes walnuts super special.

50g (heaping ⅓ cup) walnut halves

12 fresh dates, pitted

70g (½ cup) unsweetened desiccated (dried) coconut

1 tablespoon chia seeds

1 tablespoon maple syrup

Makes 10

Preheat the oven to 220°C/425°F/gas 7 and roast the walnuts on a baking sheet for 10 minutes. Remove from the oven and blitz to a smooth paste in a food processor or blender with the rest of the ingredients.

Transfer to a bowl and use your hands to roll the mixture into 10 balls. Eat immediately or refrigerate for a few hours for a harder texture.
