I have to say, my favourite thing in the world to make is salad. Why, you ask? Well, I love the fact that what we used to think of as a salad has evolved so much. Of course I love dark leafy greens and get them in my diet as much as I can, but that doesn’t mean that every salad has to have some form of lettuce in it any more. Using legumes, beans, broccoli and even cauliflower as a base for a salad is, to me, just a bit more fun and a lot more creative. So here are some simple yet super-interesting and very tasty salads that you can easily pack up and take with you wherever you go. Add a couple of pieces of your preferred bread, too, for those days when you need a heartier meal!

1 Paprika
Paprika is the perfect spice for boosting the flavour (and colour) of a dish because of its spicy yet subtle taste. It should be embraced especially for its high antioxidant count. Paprika contains many vitamins and minerals, most notably vitamins A, B6 and iron.
2. Beetroot (Beets)
As well as being rich in vitamins and minerals, beetroot are also useful for cleansing the body. When eaten they work to purify the blood, which can help to protect the body against certain cancers. They are also believed to be beneficial for mental health because of the natural presence of betaine, a substance used in the treatment of depression.
3 Cabbage
Cabbage is great for lowering your cholesterol as well as helping to protect you against certain cancers. It is an impressive source of vitamin C and manganese, and contains high levels of a group of antioxidants known as polyphenols. Regular consumption of polyphenols is linked to a lower incidence of degenerative diseases
4. Sweetcorn (Corn)
One of the great things about sweetcorn is that its antioxidant activity is actually heightened through cooking, unlike many other vegetables where the opposite is the case. In addition to this, it is full of lutein and zeaxanthin, both of which help to maintain healthy vision.
5. Turmeric
Turmeric has been prized throughout history for its medicinal uses and is particularly common in Indian cuisine. When consumed with black pepper, turmeric is much more easily absorbed into the bloodstream, helping the body to enjoy its health benefits. Not only is turmeric full of vitamins and minerals, but it is also naturally anti-inflammatory and works to promote optimum heart health.
