Cheese Biscuits

MAKES 30

85 g plain flour

¼ teaspoon baking powder

25 g butter, chopped

50 g (½ cup) grated cheddar cheese

1 egg yolk

Preheat oven to 180°C. Lightly grease a baking tray.

Sift the flour, baking powder and a pinch of salt into a bowl. Using your fingertips, rub in the butter until mixture resembles breadcrumbs. Stir in the cheese, add the egg yolk and combine by hand to form a coarse dough.

Turn out onto a lightly floured surface and knead briefly until smooth. Roll to 5 mm thickness. Using a 6 cm round pastry cutter, cut rounds from the dough, re-rolling scraps for more rounds. Place on the trays.

Bake for 12–15 minutes, or until light golden.
