Oat Biscuits

MAKES 30

190 g (2 cups) rolled oats

75 g (½ cup) plain flour

220 g (1 cup) caster sugar

½ teaspoon baking powder

125 g (½ cup) butter, melted

a few tablespoons of boiling water, for mixing

Preheat oven to 180°C. Line two baking trays with baking paper.

Combine oats, flour, sugar and baking powder in a bowl. Add the butter and 2 tablespoons boiling water, or enough to form a firm dough.

Place heaped teaspoons of the dough on the prepared tray, leaving room from spreading. Bake for 10–12 minutes, or until golden. Transfer to a wire rack to cool.
